Medieval cuisine:

Course Content:

In our courses, you will be introduced to medieval food culture and have the opportunity to read historical recipes – and then cook them yourself.

Course Fee & Duration

  • €69
  • €59 (reduced rate for students, University of Graz staff, pupils, and seniors)
  • The course starts at 6 p.m. and lasts approximately 3 hours.

Course Modules:

Grilling, Medieval Style
The treasure trove of medieval cuisine includes countless sauce recipes. Sauces were a constant companion to every meal, used to make dishes more digestible (even from a medical-dietary perspective). Although medieval medical theory may seem outdated today, the sauces taught in this cooking course are sure to spice up any barbecue. The range includes fruit, herb, and spice sauces. The course explores the origins of these recipes, and modern versions of the historical dishes are recreated in the lab kitchen.

Avant-garde
In this course, recipes from the late Middle Ages meet techniques from molecular cuisine. Participants can expect unique textures, shapes, and colors, as well as exciting flavor combinations. Classics of late medieval cuisine such as hemp soup with trout-apple tartare, the “hour egg” with corn sauce, glued chicken with peas on skewers, and nitrogen-frozen Hypocras will take your taste buds on a journey.

Basic Course
Medieval recipes reveal a diverse and refined cuisine that often shows surprising connections to modern times. In this course, you’ll learn the fundamentals of medieval cooking and try your hand at preparing typical meat and fasting dishes.

Science Ink – The Cooking Course
The documentary series Science Ink follows a scientist into a tattoo studio. The medieval recipes featured in the episodes are prepared in this innovative cooking course.

Medieval Cuisine at Home (Christmas Special)
In this evening cooking class, you’ll immerse yourself in the world of medieval cuisine — not only the dishes themselves but also their cultural and historical background. Discover the secrets of monastic fasting meals and cook hearty dishes once enjoyed at princely banquets. All the dishes we prepare can add a special medieval touch to your Christmas feast! Together, we’ll prepare a delicious meal featuring meat (veal meatballs!), fish (preserved fish!), desserts (almond purée with apple crumbs), and, of course, the unforgettable taste of spices in fantastic medieval sauces (Schwallenberg’s sauce!).

At the end of the course, enjoy the fruits of your labor in good company and experience the taste of the Middle Ages firsthand.
